Palagione vineyards are located in the southernmost part of the municipality of San Gimignano, at an altitude between 250 and 350 meters above sea level. The soils, characterized by the strong presence of Pliocene clays, give the wine a unique specificity.
The vineyard bordered and protected by the oak and holm oak forests of Poggio del Comune, holds in its pedological composition a specificity that makes it different from all others. The soil is mainly composed of stratified sands with pebbles and whitish-gray dolomitic limestone rocks from the Castelvecchio area and washed by the Riguardi stream, from which our Syrah grape wine takes its name.
Southeastern exposure allows full and even ripening of the fruit. The wooded part mitigates the summer heat, giving freshness to the wine, while the limestone soil gives elegance and structure. Harvesting is done manually during the coolest hours of the day, and the harvested grapes are immediately taken to the winery for delicate processing.
VINIFICATION PROCESS
Fermentation takes place with native yeasts in cement vats and skin contact that lasts for about 40 days. Malolactic fermentation takes place in French oak tonneaux, where the wine subsequently ages for about 2 years. This is followed by a further 12 months in the bottle before being put on sale.
ORGANOLEPTIC CHARACTERISTICS
View: ruby red with violet hues.
Nose: intense hints of blackberry, pleasant powdery notes and
spices with black pepper in evidence.
Taste: enveloping and structured, with a pleasant freshness
and long persistence.

The wine pairs ideally with lamb and kid, barbecued red meats and aged cheeses.
